Carrot Cake Porridge Fingers

This carrot cake inspired recipe is perfect for getting an extra portion of veggies into even the fussiest of eaters!

Porridge fingers are a brilliant low-mess alternative to porridge for self feeding babies. They also keep covered in the fridge for 3-5 days, making them ideal for a low effort breakfast bar or a even a cakey lunchbox treat!

The added flaxseed helps the porridge fingers keep their shape, while also providing a boost of essential nutrients such as omega 3, vitamin B1 and iron. They can easily be made dairy free and suitable for vegans by using plant milk instead of whole cows milk.

Ingredients

1 cup oats

1 cup milk

1.5 tbsp ground flaxseed

1 tsp mixed spice

1 carrot, grated

Method

- Combine all ingredients and mix well

- Leave the mixture to stand for 5 minutes until some of the liquid has been absorbed

- Grease a flat bottomed oven-proof baking tray before spooning the porridge mixture into it

- Bake at 190c fan for 20 minutes

- Allow to cool slightly, then slice the mixture into strips

- Serve with fruit and yoghurt for a healthy ‘cakey’ treat!

NOTE - if you use banana shapes like we have done, to decorate, we suggest mashing the banana a little for younger babies. Or offer as a banana spear. For more guidance on how to prepare banana for babies click here.
