Red Pepper Muffins

👶🏻Suitable from 6 months (cut into strips for young babies)

🥣Yields 12 muffins

❄️Can be frozen for up to 3 months

Ingredients:

-1 large red pepper, finely diced

-175g self raising flour

-1 egg

-50g butter

-75ml whole milk

-75g cheddar cheese, grated

-1 tsp low salt tomato purée

-1/4 tsp garlic powder

-1/2 tsp dried mixed herbs

-A good grind of black pepper

Method

-Combine the egg, butter, milk, tomato purée and finely diced pepper

-Add 55g of the cheese (holding aside 20g to sprinkle on before baking)

-Sift in the flour and add the seasonings, then mix thoroughly to combine

-Split the mixture evenly into 12 muffin pans, then sprinkle the remaining cheese on the top of your muffins

-Bake at 180c fan for 22 minutes until golden brown
